Ingredients

Scale

Cake and Apple Mixture

  • 2 cups all-purpose flour (or gluten-free blend for gluten-free option)
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/2 cup unsalted butter, softened (or coconut oil for vegan/dairy-free)
  • 1 cup brown sugar, divided
  • 2 large eggs (or flax eggs for vegan adaptation)
  • 1 tsp vanilla extract
  • 3 medium tart apples (such as Granny Smith), peeled, cored, and diced

Crumb Topping

  • 3/4 cup all-purpose flour (or gluten-free blend)
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1/2 cup cold unsalted butter, cubed (or coconut oil)
  • Optional: 1/2 cup chopped walnuts or pecans for nutty upgrade

Maple Glaze

  • 1 cup powdered sugar, sifted
  • 3 tbsp pure maple syrup
  • 12 tbsp milk or cream (or plant-based milk for dairy-free)

Instructions

  1. Prepare the Apples: Peel, core, and dice the apples into small, uniform pieces. Toss them with 1/4 cup brown sugar and 1 teaspoon cinnamon to enhance their natural sweetness and spice.
  2. Make the Crumb Topping: In a bowl, combine 3/4 cup flour, 1/2 cup brown sugar, and 1 teaspoon cinnamon. Add cold cubed butter and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs. Stir in nuts if desired. Set aside.
  3. Mix the Cake Batter: In a large bowl, whisk together 2 cups flour, baking powder, baking soda, salt, cinnamon, and nutmeg. In another bowl, beat the softened butter and 3/4 cup brown sugar until fluffy. Add eggs one at a time, then vanilla extract. Gradually add the dry ingredients to the wet ingredients and mix until smooth and uniform. Avoid overmixing.
  4. Assemble the Cake: Pour half of the cake batter into a greased baking pan. Spread the prepared apple mixture evenly over the batter. Cover apples with the remaining batter. Finally, generously sprinkle the crumb topping over the cake.
  5. Bake: Preheat oven to 350°F (175°C). Bake the cake for 45-55 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool slightly before applying the glaze.
  6. Prepare and Drizzle the Maple Glaze: Mix the sifted powdered sugar with maple syrup and milk or cream until it reaches a smooth, drizzle-able consistency. Pour the glaze evenly over the warm crumb cake for a glossy finish.

Notes

  • Choose firm apples like Granny Smith for the best texture during baking.
  • Keep butter cold when preparing the crumb topping to achieve crispy, crunchy clusters.
  • Do not overmix the cake batter to maintain a tender and fluffy texture.
  • Let the cake cool slightly before glazing to prevent the glaze from soaking in too quickly.
  • Use real maple syrup for an authentic and rich flavor.
