Bacon & Cheese Egg Bites are a quick, flavorful, and protein-packed snack combining smoky bacon, melty cheese, and fluffy eggs. Perfect as a portable breakfast, snack, or light meal, these egg bites offer balanced nutrition and a customizable, savory treat that’s easy to prepare and great anytime.

Egg Mixture

  • 6 large eggs (room temperature)
  • 1/4 cup milk or cream
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons fresh herbs (chives or parsley), optional

Fillings

  • 4 strips bacon, cooked crispy and chopped
  • 1/2 cup shredded cheese (sharp cheddar or Monterey Jack)

Instructions

  1. Prepare the Bacon: Cook the bacon until crispy using a skillet over medium heat or in the oven on a lined tray. Drain on paper towels and chop into bite-sized pieces.
  2. Mix the Eggs and Cheese: In a mixing bowl, whisk together the eggs, milk or cream, salt, and pepper until smooth. Fold in the shredded cheese and fresh herbs if using.
  3. Combine and Pour: Gently stir the chopped bacon into the egg and cheese mixture. Pour evenly into a greased muffin tin or silicone mold, filling each cavity about three-quarters full.
  4. Bake to Perfection: Bake in a preheated oven at 350°F (175°C) for 18 to 20 minutes, or until the egg bites are set and lightly golden. Test doneness with a toothpick; it should come out clean.
  5. Cool and Serve: Let the egg bites cool slightly before removing from the tin to maintain shape. Serve warm or at room temperature.

  • Don’t overfill muffin cups to prevent overflow and uneven cooking.
  • Cook bacon well to avoid excess grease during baking.
