    • 1/2 teaspoon salt
    • 3/4 cup (95 g) all-purpose flour (or gluten-free flour blend for GF version)
    • 3 large eggs, room temperature

Instructions

  1. Prepare the Bacon: Cook the bacon over medium heat until crispy. Drain on paper towels, then chop into small pieces to sprinkle and fold into the dough later.
  2. Make the Choux Pastry: In a saucepan, combine water, butter, and salt. Bring to a boil over medium heat. Remove from heat and add flour all at once, stirring vigorously until a smooth dough ball forms and pulls away from the pan.
  3. Incorporate Eggs and Cheese: Transfer the dough to a mixing bowl. Gradually beat in eggs one at a time, mixing thoroughly after each addition until the dough is smooth and glossy. Gently fold in grated cheddar cheese and chopped bacon, along with salt and pepper.
  4. Pipe or Spoon onto Baking Sheet: Using a piping bag or spoon, place dollops of dough (about 1-inch size) onto a parchment-lined baking sheet, spacing them well apart to allow for expansion.
  5. Bake Until Golden and Puffy: Bake in a preheated oven at 400°F (200°C) for 20–25 minutes, or until puffs are golden brown and have risen beautifully. Avoid opening the oven door early to prevent collapse.
  6. Cool and Serve: Allow the Bacon Cheese Puffs to cool slightly on a wire rack. Serve warm to enjoy the perfect crispy exterior and gooey cheesy center.
