Baked Chicken Parmesan Meatballs

These Baked Chicken Parmesan Meatballs are a healthy, flavorful Italian-American classic made with lean ground chicken, Parmesan cheese, and Italian herbs. Baked instead of fried, they’re smothered in marinara sauce and topped with melted mozzarella, offering a comforting, kid-friendly dish perfect for dinners, meal prep, or entertaining with minimal fuss.

Ingredients

Scale

Meatball Mixture

  • 1 lb lean ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup bread crumbs (use gluten-free bread crumbs for gluten-free option)
  • 2 cloves garlic, minced
  • 1 tsp Italian herbs (dried basil, oregano, parsley mix)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 large egg, beaten

Toppings

  • 1 cup marinara sauce (low-sodium if preferred)
  • 1 cup shredded mozzarella cheese
  • Chopped fresh basil or parsley for garnish (optional)

Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine ground chicken, grated Parmesan, bread crumbs, minced garlic, Italian herbs, salt, pepper, and beaten egg. Mix gently but thoroughly to evenly combine without overworking the mixture to keep meatballs tender.
  2. Form the Meatballs: Using clean hands or a small scoop, shape the mixture into evenly sized balls about 1.5 inches in diameter. Place them on a parchment-lined baking sheet or greased pan for even cooking.
  3. Bake Until Golden: Preheat oven to 400°F (200°C). Bake the meatballs for 15-20 minutes, turning halfway through if desired, until golden brown and cooked to an internal temperature of 165°F (74°C).
  4. Add Sauce and Cheese: Spoon marinara sauce over each meatball then top with shredded mozzarella. Return to oven for an additional 5 minutes or until the cheese is bubbly and slightly browned.
  5. Serve and Enjoy: Remove from oven and let meatballs rest briefly. Garnish with chopped fresh basil or parsley before serving.

Notes

  • Don’t overmix the meat mixture to keep meatballs tender and juicy.
  • Use a cookie scoop or measuring spoon for consistent, uniform meatball size.
  • Use freshly grated Parmesan and mozzarella for the best melting and flavor.
  • Check internal temperature with a meat thermometer to ensure meatballs are cooked through.
  • Allow meatballs to rest a few minutes after baking to lock in juices.
