Ingredients

Scale

Chicken

  • 1 lb boneless chicken breasts or thighs, sliced into bite-sized strips or cubes
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, 1 tsp
  • 1 cup panko breadcrumbs (or gluten-free breadcrumbs/crushed rice crackers for gluten-free version)
  • Vegetable oil, for frying (about 1-2 cups)

Bang Bang Sauce

  • 1/2 cup mayonnaise
  • 23 tbsp Sriracha sauce (adjust to taste)
  • 1 tbsp honey (or sugar)
  • 1 tbsp rice vinegar (or lime juice)

Instructions

  1. Prepare the Chicken: Slice chicken breasts or thighs into bite-sized strips or cubes. Pat dry with paper towels to ensure coating sticks well.
  2. Season and Coat: Season chicken pieces with salt, pepper, and garlic powder. Then dredge each piece in panko breadcrumbs, pressing lightly for full coverage to achieve maximum crunch.
  3. Fry Until Golden: Heat vegetable oil in a pan over medium-high heat. Fry chicken in batches to avoid overcrowding, cooking about 3-4 minutes per side until golden brown and fully cooked. Drain on paper towels to remove excess oil.
  4. Make the Bang Bang Sauce: In a bowl, whisk together mayonnaise, Sriracha, honey, and rice vinegar until smooth and creamy. Adjust Sriracha and honey amounts for desired spice and sweetness.
  5. Combine and Toss: Place fried chicken in a large bowl and pour Bang Bang sauce over it. Gently toss until all pieces are evenly coated in the creamy, spicy sauce.
  6. Serve and Enjoy: Transfer chicken to a serving plate. Garnish with chopped green onions, toasted sesame seeds, or fresh cilantro for extra flavor and color before serving.

Notes

  • Use room temperature chicken for even cooking and juicy texture.
  • Fry in batches to keep oil temperature steady and ensure crispiness.
  • Adjust sauce thickness by varying vinegar amount or adding a splash of water.
  • For extra crunch, double coat chicken by dipping in beaten egg before the panko breadcrumbs.
  • Prepare Bang Bang sauce ahead and refrigerate to save time.
  • Store leftover chicken separately from sauce to maintain crispness.
  • Reheat in oven or air fryer to restore crisp texture; avoid microwaving.
