Ingredients

Scale

Main Ingredients

  • 1 lb 80/20 ground beef
  • 4 cups peeled and diced Russet or Yukon Gold potatoes
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups shredded sharp cheddar cheese
  • 1 ½ cups milk or cream
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • Salt, to taste
  • Black pepper, to taste

Optional Extras

  • Bacon bits, for garnish
  • Chopped green onions, for garnish
  • Diced carrots, celery, or bell peppers (for vegetable boost)
  • Cayenne pepper or smoked paprika (for spice)

Instructions

  1. Brown the Ground Beef: Heat a large pot over medium-high heat. Add the ground beef, breaking it up with a spatula, and cook until browned and no longer pink. Drain any excess fat to prevent greasiness.
  2. Sauté Onion and Garlic: In the same pot, add the diced onion and minced garlic to the browned beef. Cook for 3 to 4 minutes until onions are translucent and fragrant to build a flavorful base.
  3. Add Potatoes and Broth: Stir in the peeled and diced potatoes, pour in the beef broth, and bring to a boil. Reduce heat and simmer for 15 to 20 minutes until potatoes are tender.
  4. Create the Creamy Base: Meanwhile, melt butter in a separate pan and whisk in flour to form a roux. Slowly add milk or cream while whisking constantly until the mixture thickens into a smooth, creamy sauce.
  5. Combine and Add Cheese: Pour the creamy sauce into the soup pot with beef and potatoes. Stir well, then gradually add shredded cheddar cheese, stirring until fully melted and incorporated into a smooth cheesy soup.
  6. Season and Final Simmer: Season the soup with salt and pepper to taste. Let it simmer gently for another 5 minutes to meld all flavors together.

Notes

  • Use sharp aged cheddar for the boldest flavor.
  • Do not overcook potatoes to avoid a mushy texture.
  • Add cheese gradually over low heat to prevent clumping or curdling.
  • Season the soup at various stages for balanced, layered flavor.
  • If soup is too thin, mix 1 teaspoon cornstarch with cold water and stir in during the final simmer.
