Ingredients

Scale

Dough Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cold butter, cut into small cubes
  • 1/4 cup sour cream or cream cheese
  • Pinch of salt
  • Salt and pepper to taste

Filling Ingredients

  • 3/4 cup shredded cheese (mozzarella, cheddar, or a blend)
  • Optional herbs or spices: fresh basil, garlic powder, paprika
  • Optional add-ins: diced jalapeños, red pepper flakes, cooked bacon bits, sausage, or pepperoni

Instructions

  1. Prepare the Dough: In a large bowl, combine 1 cup all-purpose flour with a pinch of salt. Cut 1/2 cup cold butter into small cubes and rub quickly into the flour using your fingertips until the mixture resembles coarse crumbs. Stir in 1/4 cup sour cream or cream cheese to form a soft dough. Chill in the refrigerator for about 15 minutes to firm up.
  2. Shape the Thumbprints: Divide the chilled dough into small balls about one tablespoon each. Place them evenly spaced on a parchment-lined baking sheet. Use your thumb or back of a spoon to press an indentation into the center of each ball.
  3. Fill with Cheese: Fill each indentation with a generous amount of shredded cheese or your chosen cheese blend, being careful not to overfill to avoid spillage during baking.
  4. Bake Until Golden: Preheat the oven to 375°F (190°C). Bake the appetizers for 12 to 15 minutes, until edges turn golden brown and the cheese inside is bubbling and melted. Allow to cool slightly before serving.
  5. Serve and Enjoy: Arrange on a platter, optionally garnish with fresh herbs or spices, and serve with your favorite dips or sides.

Notes

  • Chill the dough to prevent spreading and help form a perfect thumbprint cavity.
  • Use high-quality, good melting cheese for a gooey, flavorful center.
  • Avoid overfilling the cheese to prevent leaks and burning.
  • Mix different cheeses like mozzarella and sharp cheddar for richer taste.
  • You can prepare and fill the appetizers ahead of time, then refrigerate until ready to bake.
