Instructions

  1. Prepare and Sear the Chicken: Season the chicken thighs generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Place chicken skin-side down and sear until golden brown, about 5 minutes per side. Remove chicken and set aside to lock in flavors and maintain a crispy exterior.
  2. Build the Sauce: In the same skillet, add diced onions, bell peppers, and sliced mushrooms. Cook for about 6 minutes until the vegetables soften and develop color.   3. Simmer the Chicken in Sauce: Return the seared chicken thighs to the skillet, nestling them into the sauce. Cover the skillet, reduce the heat to low, and simmer gently for 25-30 minutes until the chicken is fully cooked and tender, allowing it to absorb the rich flavors of the sauce.
