Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt, black pepper, and a pinch of garlic powder. Grill or pan-sear over medium heat until cooked through and golden brown. Let the chicken cool, then slice into bite-sized pieces to make filling easier.
  2. Crispen the Tortilla Cones: Preheat the oven to 375°F (190°C). Lightly brush each flour tortilla with olive oil. Shape them carefully over metal cone molds or rolled aluminum foil to form cones. Place on a baking sheet and bake for 10–12 minutes until golden and crisp. Allow cones to cool completely before filling.
  3. Prepare the Salad Filling: In a large bowl, combine chopped romaine lettuce, Caesar dressing, shredded Parmesan cheese, fresh lemon juice, and freshly ground black pepper. Add the grilled chicken pieces and toss gently to evenly coat all ingredients.
  4. Fill the Tortilla Cones: Spoon the chicken Caesar salad mixture into each cooled tortilla cone carefully to avoid breaking. Top with optional croutons or extra Parmesan for added crunch and flavor, then serve immediately.
