Ingredients

Scale

Protein

  • 1 lb chicken breast, sliced thin

Vegetables

  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 3 garlic cloves, minced

Seasoning & Marinade

  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp fresh lime juice

To Serve

  • 68 flour tortillas
  • Optional toppings: sour cream, shredded cheese, chopped cilantro, sliced avocado

Instructions

  1. Prepare the Chicken and Vegetables: Slice chicken breasts into thin strips for quick, even cooking. Cut bell peppers and onions into thin, uniform slices to ensure they soften but remain slightly crisp.
  2. Mix the Fajita Seasoning: In a small bowl, combine chili powder, cumin, paprika, oregano, salt, and black pepper to create the spice blend that flavors the chicken.
  3. Marinate the Chicken: Toss chicken strips with olive oil, minced garlic, lime juice, and the fajita seasoning. Let it marinate for at least 10 minutes to infuse the flavors and keep the chicken juicy.
  4. Cook the Chicken: Heat a large skillet over medium-high heat and add a drizzle of olive oil. Sear the chicken strips for 5-7 minutes until browned and cooked through. Remove the chicken from the skillet and set aside to rest.
  5. Sauté the Vegetables: In the same skillet, add more olive oil if needed. Add sliced onions and bell peppers and cook for 4-5 minutes until they are slightly softened but still vibrant and a bit crisp.
  6. Combine and Warm Through: Return the cooked chicken to the skillet with the vegetables and stir to combine. Heat for another 2 minutes to meld the flavors perfectly.
  7. Serve with Warm Tortillas: Warm the flour tortillas briefly in a pan or microwave until soft. Fill each tortilla generously with the chicken and vegetable mixture and top with your choice of sour cream, cheese, cilantro, and avocado.

Notes

  • Slice chicken and vegetables evenly to ensure uniform cooking.
  • Use fresh lime juice to brighten and balance the flavors.
  • Avoid overcrowding the pan; cook in batches if necessary for a good sear.
  • Allow cooked chicken to rest to maintain juiciness and tenderness.
  • Customize the seasoning spice level to your preference.
  • Warm tortillas properly to keep them pliable and ideal for wrapping.
