This quick and easy recipe balances savory and slightly sweet flavors and is perfect for family dinners or special occasions.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil

Sauce

  • 3 cloves garlic, minced
  • 1/2 cup sundried tomatoes, diced (preferably oil-packed)
  • 1 cup heavy cream
  • 3/4 cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs or 1 tablespoon fresh basil, chopped
  • Additional salt and pepper, to taste

Garnish (optional)

  • Fresh basil or parsley, chopped
  • Extra grated Parmesan cheese
  • Drizzle of olive oil

Instructions

  1. Prepare the chicken: Season the chicken breasts generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat, then sear the chicken until golden brown on both sides and cooked through, about 5 to 7 minutes per side. Remove the chicken and set aside.
  2. Sauté the aromatics: Using the same skillet, add the minced garlic and diced sundried tomatoes. Sauté for 1-2 minutes until fragrant, making sure the garlic does not burn. This step builds the flavorful base of your sauce.
  3. Make the creamy sauce: Lower the heat to medium-low and pour in the heavy cream, stirring to loosen any browned bits from the pan. Add freshly grated Parmesan cheese slowly, stirring continuously to melt the cheese into a smooth, creamy sauce. Season with salt, pepper, and herbs to taste.
  4. Combine chicken and sauce: Return the chicken breasts to the skillet, spooning sauce over the top so they soak up the creamy goodness. Simmer everything together for 5 more minutes until the sauce thickens slightly and the flavors meld beautifully.
  5. Serve and enjoy: Turn off the heat and sprinkle fresh basil or parsley to brighten the dish. Serve immediately while hot, paired with your favorite sides such as pasta, rice, or crusty bread.

Notes

  • Use room temperature chicken for even cooking and tender meat.
  • Don’t rush the sear; a golden crust locks in flavor and moisture.
  • Add Parmesan cheese gradually to prevent clumping and ensure a silky sauce.
  • Maintain medium-low heat when adding cream to avoid curdling.
  • Choose oil-packed sundried tomatoes for better flavor and juiciness.
