  • 2 tbsp toasted jasmine rice powder
  • 12 tsp vegetable or neutral oil (for cooking chicken)

Instructions

  1. Cook the Ground Chicken: Heat a non-stick pan over medium heat and add 1-2 teaspoons of oil. Cook the ground chicken, breaking it apart with a spatula, until fully cooked and no longer pink. Allow it to brown slightly for extra texture and flavor, then remove from heat.
  2. Toast and Grind Rice: In a dry skillet over medium heat, toast jasmine rice until golden brown and fragrant, about 3-5 minutes. Transfer the toasted rice to a spice grinder or mortar and pestle and crush into a coarse powder.
  3. Mix the Larb Dressing: In a mixing bowl, combine the fresh lime juice, fish sauce, and chili flakes or fresh chilies. Adjust the quantities to balance tangy, salty, and spicy flavors according to your preference.
  4. Combine Ingredients: Add the cooked chicken into the bowl with the dressing. Stir in thinly sliced red onion, chopped mint, cilantro, and toasted rice powder. Mix thoroughly to blend all the flavors evenly.
  5. Prepare Lettuce Wraps: Carefully separate and rinse the lettuce leaves, patting them dry. Place a generous spoonful of the chicken larb mixture onto each leaf and fold the edges to create neat wraps, ready to serve.
