Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine the ground chicken, minced garlic, minced onion, breadcrumbs, egg, salt, pepper, and chopped parsley. Gently mix just until combined to avoid making the meatballs tough.
  2. Shape the Meatballs: Form the mixture into evenly sized meatballs about 1 to 1.5 inches in diameter using your hands or a cookie scoop. Place them on a plate or a baking sheet lined with parchment paper.
  3. Cook the Meatballs: Heat olive oil in a large non-stick skillet over medium heat. Add the meatballs without crowding the pan and cook for 3-4 minutes per side until golden brown and cooked through. Cook in batches if needed.
  4. Make the Honey Mustard Sauce: In a small bowl, whisk together honey, Dijon mustard, olive oil, salt, and pepper. Adjust sweetness or tanginess according to your taste preference.
  5. Toss Meatballs in Sauce: Return the cooked meatballs to the skillet on low heat. Pour the honey mustard sauce over them and gently toss to coat. Warm through for 1-2 minutes before serving.
