Meatballs
- 1 lb ground chicken
- 1/3 cup breadcrumbs (or almond flour for gluten-free)
- 1 large egg
- 2 cloves garlic, minced
- 1 small onion, finely minced
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
- 2 tbsp olive oil (for searing)
Honey Mustard Sauce
- 3 tbsp honey
- 3 tbsp Dijon mustard
- 1 tbsp olive oil
- Salt and pepper to taste
- Optional: additional fresh parsley for garnish
- Prepare the Meatball Mixture: In a large bowl, combine the ground chicken, minced garlic, minced onion, breadcrumbs, egg, salt, pepper, and chopped parsley. Gently mix just until combined to avoid making the meatballs tough.
- Shape the Meatballs: Form the mixture into evenly sized meatballs about 1 to 1.5 inches in diameter using your hands or a cookie scoop. Place them on a plate or a baking sheet lined with parchment paper.
- Cook the Meatballs: Heat olive oil in a large non-stick skillet over medium heat. Add the meatballs without crowding the pan and cook for 3-4 minutes per side until golden brown and cooked through. Cook in batches if needed.
- Make the Honey Mustard Sauce: In a small bowl, whisk together honey, Dijon mustard, olive oil, salt, and pepper. Adjust sweetness or tanginess according to your taste preference.
- Toss Meatballs in Sauce: Return the cooked meatballs to the skillet on low heat. Pour the honey mustard sauce over them and gently toss to coat. Warm through for 1-2 minutes before serving.
Notes
- Don’t overmix the ground chicken to keep meatballs moist and tender.
- Use a scoop to make meatballs uniform in size for even cooking.
- Searing the meatballs adds a flavorful golden crust; don’t skip this step.
- Fresh garlic and onion provide better flavor than powdered substitutes.
- Taste the sauce and adjust honey levels based on preferred sweetness.
