Instructions

  2. Sear the Beef: Heat a tablespoon of butter and olive oil in a large skillet over medium-high heat. Add the beef strips in batches, ensuring they brown nicely but don’t stew, then remove and set aside.
  3. Sauté Vegetables: In the same pan, add a bit more butter if needed and toss in the onions, mushrooms, and garlic. Sauté until the onions become translucent and the mushrooms release their moisture and turn golden brown.
  4. Create the Sauce: Stir in a tablespoon of Dijon mustard and gradually pour in the beef broth, scraping any browned bits from the pan to intensify the flavor. Let the mixture simmer to reduce slightly.
  5. Combine Beef and Finish with Sour Cream: Return the browned beef to the skillet, allowing it to warm up. Remove the pan from heat and gently fold in the sour cream until the sauce is creamy and silky—avoid boiling now to keep the sour cream smooth.
