Instructions

  1. Prepare Your Ingredients: Gather cashews, shredded coconut, dried pineapple, honey or maple syrup, coconut oil, vanilla extract, and sea salt. Chop the dried pineapple into small, bite-sized pieces for even texture and mixing.
  2. Blend the Nuts and Pineapple: Place the cashews and chopped dried pineapple into a food processor. Pulse until finely chopped but still retaining some texture, similar to coarse sand or small crumbs.
  3. Mix in Coconut and Sweeteners: Add shredded coconut, honey or maple syrup, melted coconut oil, vanilla extract, and a pinch of sea salt to the blended mixture. Stir thoroughly with a spoon or your hands until well combined and sticky enough to hold shape.
  4. Shape the Bites: Using your hands or a cookie scoop, roll the mixture into small, bite-sized balls. Press firmly to help them hold together but keep them tender.
