Cottage Cheese Chips

Cottage Cheese Chips are a crunchy, protein-packed, low-carb snack made from cottage cheese, Parmesan, and seasonings. Baked to golden crispness with a savory garlic and herb flavor, they’re perfect for keto, paleo, and gluten-free diets. Easy to make with simple ingredients and versatile for customizations or pairing with dips and salads.

Ingredients

Scale

Main Ingredients

  • 1 cup cottage cheese, drained thoroughly
  • 2 large egg whites
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

Optional Herbs and Seasonings

  • 1 teaspoon fresh or dried rosemary, thyme, or oregano (optional)
  • Additional seasonings like cayenne pepper, smoked paprika, fresh basil, dill, or parsley for variations
  • Seed toppings such as sesame seeds, flaxseeds, or chia seeds (optional)

Instructions

  1. Prepare the Batter: Drain excess liquid from the cottage cheese to avoid sogginess. In a bowl, combine the drained cottage cheese with egg whites, grated Parmesan, garlic powder, black pepper, salt, and any optional herbs or seasonings you choose. Mix thoroughly until you form a uniform batter.
  2. Shape the Chips: Line a baking sheet with parchment paper or a silicone mat. Using a spoon, spread thin, even circles of the batter roughly 2 to 3 inches in diameter. Make sure to leave enough space between each chip to allow even baking.
  3. Bake Until Crispy: Preheat your oven to 350°F (175°C). Bake the chips for 20 to 25 minutes, or until they turn golden brown and are crispy around the edges. Keep a close eye during the last few minutes to prevent burning.
  4. Cool and Serve: Remove the chips from the oven and let them cool completely on the baking tray. Cooling allows the chips to harden further and achieve maximum crunch. Once cooled, enjoy immediately or store as desired.

Notes

  • Drain Thoroughly: Press the cottage cheese well to remove excess moisture for crispier chips.
  • Thin Layer is Key: Spread the batter thinly and evenly for optimal crunch and even cooking.
  • Use a Nonstick Surface: Parchment paper or silicone mats prevent sticking and make cleanup easy.
  • Watch the Oven: Monitor the last 5 minutes of baking to avoid over-browning or burning.
  • Cool Completely: Chips firm up as they cool, don’t skip this step before serving or storing.
