  • 1 cup shredded provolone or mozzarella cheese

Instructions

  1. Prepare the Vegetables: Thinly slice onions and bell peppers. In a skillet over medium heat, sauté them in olive oil or butter until soft and fragrant, about 5-7 minutes.
  2. Layer the Ingredients in the Crockpot: Spray the crockpot with cooking oil. Place a layer of sliced potatoes at the bottom, followed by the sautéed onions and peppers, then the thinly sliced beef on top.
  3. Season and Add Broth: Sprinkle garlic powder, salt, and pepper evenly over the layers. Pour beef broth over everything to keep it moist and add rich flavor.
  4. Cook Low and Slow: Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, allowing flavors to meld and the beef to become tender.
  5. Add Cheese and Finish Cooking: About 30 minutes before serving, sprinkle shredded provolone or your choice of cheese over the casserole. Cover and cook until the cheese melts into gooey perfection.
