Instructions

  1. Prepare the Chicken: Place boneless, skinless chicken breasts or thighs at the bottom of your crockpot. Season lightly with salt, pepper, onion powder, and garlic powder to build a flavorful foundation.
  2. Add Liquids and Tomatoes: Pour in the chicken broth and the Rotel diced tomatoes including their juice. These provide moisture for the pasta and add a mild zesty flavor.
  3. Layer the Pasta and Cream Cheese: Break the spaghetti noodles in half and spread them evenly over the chicken and liquids. Scatter the cream cheese chunks on top; they will melt slowly creating a rich, creamy sauce.
  4. Cook on Low: Cover the crockpot and cook on low for 3 to 4 hours until the chicken is cooked through and the pasta is tender.
