  • 2 tbsp tomato paste or 1 cup crushed tomatoes
  • 1 cup stock (vegetable or chicken) or water

Optional Vegetables

  • 1 bell pepper, sliced (optional)
  • ½ cup peas (optional)
  • 1 carrot, sliced (optional)

Finishing Touches

  • Fresh coriander or parsley, chopped (to garnish)

Instructions

  1. Prepare the Sausages: Slice the sausages evenly and brown them in a pan over medium heat until golden on all sides to retain juiciness and develop caramelized flavor.
  2. Sauté Aromatics: In the same pan, add diced onions, minced garlic, and grated ginger. Cook gently until the onions are soft and translucent, releasing sweetness for the curry base.
  3. Add Curry Powder and Tomatoes: Sprinkle in curry powder and stir for about a minute to toast the spices and release their aromas. Add tomato paste or crushed tomatoes and stir well, allowing the sauce to thicken.
  4. Combine and Simmer: Return browned sausages to the pan. Pour in stock or water and bring to a gentle simmer. Let the curry cook until sausages are fully cooked and flavors meld, about 10-15 minutes. Add optional vegetables towards the end if using.
  5. Finish with Fresh Herbs: Just before serving, sprinkle chopped fresh coriander or parsley over the top for a bright, fresh contrast to the warm curry flavors.
