Ingredients

Scale

Crispy Fries

  • Frozen or homemade fries (quantity as desired for serving)

Spicy Chicken

  • Boneless chicken pieces (about 1 lb)
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 tbsp cooking oil

Smoky Bacon

  • 6 slices bacon, cooked until crispy and chopped

Melted Cheese

  • 1 to 1 1/2 cups shredded cheddar cheese or cheese blend

Finishing Toppings

  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • Optional: sliced fresh or pickled jalapeños (to taste)

Instructions

  1. Prepare the Fries: Bake or fry your frozen or homemade fries according to package instructions or recipe until golden and crispy. Spread the fries evenly on a large serving dish for layering.
  2. Cook the Spicy Chicken: Cut boneless chicken into bite-sized pieces. Season evenly with paprika, chili powder, garlic powder, salt, and pepper. Heat oil in a skillet over high heat and cook chicken pieces until browned and cooked through, about 6-8 minutes, keeping them juicy.
  3. Crisp the Bacon: While the chicken cooks, fry the bacon strips in a pan until crispy. Drain on paper towels, then crumble or chop into bite-sized pieces for easier distribution.
  4. Assemble the Loaded Fries: Layer the cooked fries with the spicy chicken pieces and crispy bacon. Generously sprinkle shredded cheese over the top. Place under a broiler or in a hot oven briefly until the cheese melts and bubbles, about 2-4 minutes.
  5. Add the Finishing Touches: Remove the fries from the oven. Garnish with dollops of sour cream, chopped green onions, and optional sliced jalapeños. Serve immediately while warm and gooey.

Notes

  • Use freshly ground spices to maximize chicken flavor.
  • For extra crispy fries, bake or fry them twice before assembling.
  • Avoid overcooking the chicken by using high heat and cooking just until done.
  • Spread cheese evenly and melt under a broiler for a bubbly, even finish.
  • The sour cream and green onions provide a fresh, cool balance to the spicy and salty toppings.
