Instructions

  1. Prepare the Meat Filling: In a large skillet, brown the ground beef or turkey over medium heat until fully cooked. Drain any excess fat, then stir in the taco seasoning along with a splash of water. Let it simmer for a few minutes until thickened and fragrant.
  2. Soften the Tortillas: Warm the tortillas in the microwave wrapped in a damp paper towel or briefly heat them on a skillet to make them flexible and easy to layer without cracking.
  3. Layer the Ingredients: In a greased baking dish, spread a thin layer of refried beans evenly. Top with a tortilla layer, then add a portion of the meat mixture, sautéed onions and bell peppers, a sprinkle of cheese, and a drizzle of salsa or enchilada sauce. Repeat these layers until the ingredients are used up, finishing with a generous cheese topping.
  4. Bake Until Bubbling: Cover the dish with foil and bake in a preheated oven at 375°F (190°C) for about 25 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is melted and golden brown.
  5. Rest and Serve: Let the taco lasagna cool for 5 to 10 minutes before slicing. This resting time helps the layers set for cleaner servings.
