Spicy Honey Glaze

  • 4 tablespoons honey
  • 1 teaspoon chili flakes or 1 tablespoon finely diced fresh hot pepper (adjust to taste)
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Prepare the Filling: Crumble the feta cheese into a bowl. Mix in finely chopped fresh herbs and a pinch of black pepper to evenly season and enhance the flavor.
  2. Layer and Brush the Pastry: Lay out the phyllo or puff pastry sheets on a clean surface. Lightly brush each sheet with melted butter or olive oil to create crispy, flaky layers when baked.
  3. Assemble the Rolls: Cut the pastry into strips wide enough to hold a spoonful of filling. Place some of the feta mixture at one end of each strip, then carefully roll up, tucking in the sides to seal the filling inside.
  4. Bake Until Golden and Crispy: Arrange the rolls on a lined baking sheet. Bake in a preheated oven at 375°F (190°C) for 15-20 minutes or until golden brown and crisp.
  5. Prepare the Spicy Honey Glaze: While the rolls bake, gently warm the honey in a small saucepan. Stir in chili flakes or diced hot pepper and add lemon juice if using. Let it infuse briefly, then remove from heat.
  6. Drizzle and Serve: Allow the rolls to cool slightly, then generously drizzle the spicy honey glaze over the top. Serve warm for the best flavor experience.
