For the Tzatziki Sauce

  • 1 medium cucumber, grated and drained
  • 1 cup Greek yogurt
  • 1 clove garlic, minced
  • 2 tbsp fresh dill, chopped
  • 1 tbsp fresh lemon juice
  • Salt, to taste
  • Black pepper, to taste

For Assembling the Burgers

  • Whole wheat or brioche buns, lightly toasted
  • Sliced cucumber
  • Sliced tomato
  • Sliced red onion
  • Fresh greens (lettuce, arugula, or spinach)
  • Optional: crumbled feta cheese for garnish

Instructions

  1. Prepare the Chicken Patties: In a large bowl, combine the ground chicken with finely chopped red onion, minced garlic, fresh dill, parsley, oregano, salt, and pepper. Mix gently until all ingredients are evenly incorporated, being careful not to overwork the meat to keep the patties tender.
  2. Shape the Patties: Divide the mixture into equal portions and form each into a round patty about ¾ inch thick. Place the patties on a plate or tray, ready for cooking.
  3. Make the Tzatziki Sauce: Grate the cucumber, then squeeze out excess liquid using a clean kitchen towel. In a bowl, combine the drained cucumber with Greek yogurt, minced garlic, fresh dill, lemon juice, salt, and pepper. Stir thoroughly and chill in the fridge until serving.
  4. Cook the Chicken Burgers: Heat olive oil in a skillet over medium heat. Cook the patties for 5-6 minutes per side or until golden brown on the outside and fully cooked inside (internal temperature 165°F/74°C).
  5. Assemble Your Burgers: Lightly toast the buns. Spread a generous amount of tzatziki on the bottom half, add the cooked chicken patty, then top with sliced cucumber, tomato, red onion, and fresh greens. Finish with the top bun and serve immediately.
