Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons extra virgin olive oil (for marinating)
  • Salt, to taste
  • Black pepper, to taste
  • Optional: pinch of garlic powder or Italian seasoning

Bruschetta Topping

  • 2 Roma tomatoes, chopped
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 2 tablespoons red onion, finely diced

Instructions

  1. Prepare the Bruschetta Topping: Chop Roma tomatoes into small pieces and finely mince garlic. Combine tomatoes, garlic, chopped fresh basil, and, if using, diced red onion in a bowl. Add a splash of balsamic vinegar, about two tablespoons of olive oil, then season with salt and pepper. Mix well and let the mixture sit while preparing the chicken to allow flavors to meld.
  2. Marinate the Chicken: Brush the chicken breasts with olive oil and season generously with salt and pepper. Optionally, add a pinch of garlic powder or Italian seasoning for extra flavor. Let the chicken marinate for 10 to 15 minutes to enhance taste and tenderness.
  3. Grill the Chicken: Preheat your grill or grill pan to medium-high heat. Place the chicken breasts on the grill grates and cook for 5 to 7 minutes per side, or until the internal temperature reaches 165°F (75°C) and grill marks form. Avoid overcooking to keep the chicken juicy and tender.
  4. Top with Bruschetta and Serve: Remove the cooked chicken from the grill and spoon the fresh bruschetta topping generously over each breast. Serve immediately to enjoy the warm, juicy chicken paired with the bright and flavorful topping.

Notes

  • Use ripe tomatoes for the best flavor in the bruschetta topping.
  • Allow the bruschetta mixture to sit for at least 10 minutes before serving to meld flavors.
  • Keep your grill clean to prevent sticking and achieve perfect sear marks.
  • Use a meat thermometer to ensure chicken is cooked perfectly to 165°F (75°C).
  • Let the grilled chicken rest for 5 minutes before serving to retain juices.
