Ingredients

Scale

Chicken and Marinade

  • 2 large chicken breasts, thinly sliced or pounded
  • ½ cup teriyaki sauce

Grilled Pineapple

  • 4 pineapple rings (fresh or canned, patted dry)

Sandwich Components

  • 4 Hawaiian sweet rolls or buns
  • 4 slices Swiss cheese
  • ½ red onion, thinly sliced
  • 4 leaves fresh lettuce or mixed greens
  • Butter or oil for grilling and toasting buns

Instructions

  1. Marinate the Chicken: Start by marinating your chicken breasts in teriyaki sauce for at least 30 minutes to soak up the sweet and savory flavor. This makes the chicken juicy and flavorful.
  2. Prepare the Grill and Pineapple: Preheat your grill or grill pan to medium-high heat. Brush it lightly with oil to prevent sticking. Place the pineapple rings on the grill and cook each side for 2-3 minutes until you see grill marks and the pineapple caramelizes slightly.
  3. Grill the Chicken: Place the marinated chicken on the hot grill and cook for 5-7 minutes per side until fully cooked and nicely charred. In the last minute of grilling, place a slice of Swiss cheese on each chicken piece and cover the grill to melt the cheese perfectly.
  4. Toast the Buns: Split the Hawaiian rolls and lightly butter each cut side. Place them on the grill, cut side down, for 1-2 minutes until they turn golden brown and become toasty.
  5. Assemble the Sandwich: Layer the bottom bun with fresh lettuce, add the cheesy grilled chicken on top, then place a caramelized pineapple ring and red onion slices. Finish with the top bun. Optionally, add extra teriyaki sauce or mayo to taste.

Notes

  • Pound chicken breasts evenly for uniform grilling.
  • Don’t skip marinating; it ensures juicy, flavorful chicken.
  • Watch pineapple closely to avoid burning and achieve perfect caramelization.
  • Let grilled chicken rest for a few minutes before assembling to lock in juices.
  • Use quality Hawaiian rolls for slightly sweet flavor that elevates the sandwich.
