Ingredients

Scale

Proteins and Vegetables

  • 1 lb lean ground beef
  • 1 lb fresh Brussels sprouts, trimmed and halved
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 green onions, thinly sliced (for garnish)

Sauces and Oils

  • 2 tablespoons soy sauce (or tamari/coconut aminos for gluten-free)
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil

Seasonings and Extras

  • 1 teaspoon coconut sugar or brown sugar
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Prepare Your Ingredients: Trim and halve fresh Brussels sprouts, mince garlic and ginger, and slice green onions. Having all ingredients ready ensures fast, smooth cooking.
  2. Brown the Ground Beef: Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Add ground beef, breaking it apart with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain excess fat if needed.
  3. Cook the Brussels Sprouts: Add halved Brussels sprouts to the skillet with the beef. Stir frequently and cook until bright green with browned edges, about 6-8 minutes, developing their natural sweetness.
  4. Add Aromatics and Sauce: Stir in minced garlic and ginger, cooking until fragrant, about 1 minute. Pour in soy sauce, sesame oil, and sprinkle coconut or brown sugar. Toss well to coat and cook for an additional 2-3 minutes.
  5. Final Touches: Sprinkle red pepper flakes to taste and garnish with sliced green onions. Give a final toss, then plate and serve immediately.

Notes

  • Choose fresh, smaller Brussels sprouts for sweeter and less bitter flavor.
  • Avoid overcrowding the pan; cook in batches if needed to ensure browning instead of steaming.
  • Use medium-high heat for quick, even cooking and caramelization.
  • Adjust soy sauce and sugar amounts according to your taste preference.
  • Let the stir fry rest off heat for a minute before serving to allow flavors to meld.
