Ingredients

Scale

Fruits & Nuts

  • 3 ripe bananas, mashed
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 1/2 cup shredded coconut
  • 1/2 cup macadamia nuts, toasted and chopped

Wet Ingredients

  • 2 large eggs
  • 1/3 cup coconut oil, melted
  • 1/2 cup pineapple juice
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 3/4 cups all-purpose flour (or gluten-free flour blend for gluten-free option)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/2 cup brown sugar, packed

Instructions

  1. Prepare Your Ingredients: Preheat your oven to 350°F (175°C). Grease and flour a loaf pan. In a medium bowl, mash the ripe bananas until smooth. Chop the pineapple chunks if needed and toast the macadamia nuts lightly to bring out their flavor.
  2. Mix the Wet Ingredients: In a large bowl, beat together the eggs, melted coconut oil, brown sugar, vanilla extract, and pineapple juice until fully combined. Stir in the mashed bananas for natural sweetness and moisture.
  3. Combine Dry Ingredients: In a separate bowl, whisk the all-purpose flour, baking soda, baking powder, and optional spices (cinnamon and nutmeg) to ensure even distribution and help the bread rise evenly.
  4. Fold Wet and Dry Mixtures: Gradually add the dry ingredients into the wet ingredients, stirring gently until just combined. Avoid overmixing to keep the bread tender. Carefully fold in the pineapple chunks, shredded coconut, and toasted macadamia nuts.
  5. Bake to Perfection: Pour the batter into your prepared loaf pan and smooth the top. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool completely before slicing to retain its moist texture.

Notes

  • Use very ripe bananas for maximum sweetness and moisture.
  • Lightly toast macadamia nuts to intensify their flavor.
  • Avoid overmixing batter to keep the loaf tender.
  • Check doneness using a toothpick; it should come out clean when done.
  • Cool the bread completely before slicing to prevent it from falling apart.
