Instructions

  1. Prepare the Chicken: Pat the chicken pieces dry with paper towels and season both sides generously with salt and pepper to ensure a flavorful crust once cooked.
  2. Brown the Chicken: Melt butter in a large skillet over medium heat. Add the chicken pieces skin side down and cook for 5-7 minutes until golden and crispy. Flip and brown the other side. Remove chicken and set aside.
  3. Sauté Aromatics: In the same skillet with leftover butter and chicken juices, add finely chopped onion and minced garlic. Sauté until soft and fragrant, about 3 minutes, scraping up any browned bits from the pan bottom.
  4. Make the Gravy Base: Sprinkle flour over the onions and garlic and cook, stirring constantly, for about 2 minutes to form a roux. Slowly whisk in chicken broth and milk or cream, removing any lumps to create a smooth gravy.
  5. Simmer the Chicken in Gravy: Return the browned chicken pieces to the skillet, spoon some gravy over them, reduce heat to low, cover, and simmer gently for 20-25 minutes until fully cooked and tender.
