Instructions

  1. Sauté Aromatics and Brown the Beef: Set your Instant Pot to the sauté function and heat olive oil. Add chopped onions and minced garlic, cooking until soft and fragrant. Then add ground beef; cook until browned, breaking it apart for even cooking and flavor development.
  2. Add Spices and Mix Well: Sprinkle chili powder, cumin, smoked paprika, salt, and pepper over the browned beef mixture. Stir to combine and allow the spices to toast slightly, unlocking their fragrance and building depth.
  3. Incorporate Tomatoes, Beans, and Broth: Pour in diced tomatoes with their juices, rinsed kidney and black beans, and beef broth. Stir thoroughly, scraping the bottom of the pot to prevent sticking and avoid burn warnings.
  4. Pressure Cook and Natural Release: Secure the Instant Pot lid and set the valve to sealing position. Cook on high pressure for 20 minutes, then let the pressure release naturally for 10 minutes before manually venting remaining pressure.
