Ingredients

Scale

Protein

  • 2 boneless, skinless chicken breasts

Pasta & Liquids

  • 8 oz uncooked fettuccine pasta
  • 2 cups chicken broth
  • 1 cup heavy cream

Dairy

  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp butter

Flavorings & Seasonings

  • 3 garlic cloves, minced
  • Salt, to taste
  • Pepper, to taste
  • 1 tsp Italian seasoning (optional)

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt, pepper, and Italian seasoning if using. Set the Instant Pot to sauté mode and melt the butter. Add the chicken breasts and cook each side for about 2-3 minutes until lightly browned. This step locks in flavor before pressure cooking.
  2. Add Pasta and Liquids: Layer the uncooked fettuccine pasta evenly over the browned chicken. Pour in the chicken broth carefully, ensuring the pasta is submerged but do not stir to prevent sticking. Sprinkle the minced garlic evenly on top for flavor infusion during cooking.
  3. Pressure Cook: Seal the Instant Pot lid and set it to manual high pressure for 7 minutes. Once the cooking time completes, perform a quick release to prevent the pasta from overcooking and becoming mushy.
  4. Stir in Cream and Cheese: Carefully open the lid and add the heavy cream and freshly grated Parmesan cheese. Stir well; the heat will melt the cheese creating a thick, velvety Alfredo sauce, combining all flavors smoothly.
  5. Final Touches: Taste the sauce and adjust seasoning with additional salt or pepper if needed. If the sauce is too thick, thin it out with a splash of chicken broth or cream. Let the pot sit on warm mode for a couple of minutes to thicken the sauce further before serving.

Notes

  • Use freshly grated Parmesan cheese for a smoother, richer sauce.
  • Do not stir the pasta before cooking; layering it on top prevents clumping and sticking.
  • Perform quick release promptly after cooking to avoid mushy pasta.
  • Adjust salt and pepper after cooking for perfect flavor balance.
  • Use room temperature heavy cream to prevent curdling and help it combine better into the sauce.
