Instructions

  1. Step 1: Sear the Chicken

    Season the chicken breasts with salt, pepper, and Italian seasoning. Set the Instant Pot to sauté mode and heat olive oil. Brown the chicken breasts in the hot oil until golden on both sides to lock in flavor and create a crust. Remove chicken and set aside.

  2. Step 2: Sauté Garlic and Sun-Dried Tomatoes

    Add butter to the pot and sauté minced garlic and chopped sun-dried tomatoes until fragrant and softened, building a rich flavor base for the sauce.

  3. Step 3: Add Liquids and Pressure Cook

    Pour in chicken broth and carefully scrape the bottom of the pot to lift any browned bits (preventing burn errors). Return the chicken to the pot, seal the lid, and pressure cook on high for 7 minutes for tender, juicy meat.

  4. Step 4: Stir in Cream, Spinach, and Parmesan

    After natural pressure release, open the pot and stir in heavy cream, fresh spinach, and grated Parmesan cheese. The heat will wilt the spinach and thicken the sauce immediately.
