  • 1/4 cup bell peppers, finely chopped
  • 1/4 cup spinach, chopped
  • 1/4 cup mushrooms, diced and sautéed
  • 1/4 cup tomatoes, diced
  • 1/4 cup cooked bacon or sausage crumbles
  • 1/4 cup tofu, crumbled (for plant-based option)

  • Nonstick cooking spray or silicone molds
  • 1 cup water (for Instant Pot)

Instructions

  1. Prepare Your Ingredients: Chop vegetables finely and cook any raw meats before mixing to ensure even flavor distribution and proper texture.
  2. Mix the Egg Base: In a mixing bowl, whisk together the eggs, cottage cheese or Greek yogurt, seasonings (salt, pepper, garlic powder), shredded cheese, and fresh herbs until smooth and creamy.
  3. Add Fillings: Evenly distribute your chosen fillings into silicone molds or ramekins. Pour the egg mixture on top, filling approximately 3/4 full to allow room for expansion during cooking.
  4. Prepare the Instant Pot: Pour 1 cup of water into the Instant Pot and place the trivet inside. Arrange the filled molds carefully on the trivet. Cover the molds with foil and seal the lid of the Instant Pot.
  5. Cook: Set the Instant Pot to pressure cook on high for 8-10 minutes. Once cooking is complete, allow a natural pressure release to maintain a creamy, tender texture.
  6. Cool and Remove: Using oven mitts, carefully remove the molds from the Instant Pot. Allow the egg bites to cool slightly before unmolding and serving.
