Ingredients

Scale

Meatball Mixture

  • 1 lb ground beef
  • 1/2 cup long grain white rice (uncooked)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika

Sauce

  • 2 cups tomato sauce
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce

Garnish

  • 2 tbsp fresh parsley, chopped

Instructions

  1. Prepare the Meatball Mixture: In a large mixing bowl, combine ground beef, uncooked rice, finely chopped onion, minced garlic, salt, pepper, and paprika. Mix gently just until ingredients are evenly combined to avoid tough meatballs.
  2. Shape the Meatballs: Using your hands or a spoon, form the mixture into small, uniform-sized balls about the size of a golf ball to ensure even cooking.
  3. Sear the Meatballs: Set the Instant Pot to sauté mode. Brown the meatballs in batches until all sides have a golden crust, adding extra flavor and helping them hold together.
  4. Add Sauce Ingredients: Once all meatballs are seared, layer them evenly in the Instant Pot. Pour the tomato sauce, beef broth, and Worcestershire sauce over the meatballs. Gently stir the sauce to distribute evenly without breaking up the meatballs.
  5. Pressure Cook: Secure the lid on the Instant Pot, seal the pressure valve, and set to high pressure for 10 minutes. After cooking, allow a natural release for 10 minutes, then carefully perform a quick release to release remaining pressure.
  6. Serve and Garnish: Open the lid and gently stir the meatballs to coat them well in the sauce. Sprinkle chopped fresh parsley over the top before serving for a burst of color and freshness.

Notes

  • Don’t overmix the meatball mixture to keep meatballs tender.
  • Use a scoop or measuring spoon to keep meatballs uniform in size.
  • Browning meatballs adds deeper flavor and firmer texture.
  • Use long grain white rice to prevent mushiness during cooking.
  • Allow natural pressure release to help meatballs stay juicy and tender.
