Instructions

  1. Prepare Your Ingredients: Slice the chicken breasts into thin, bite-sized pieces to ensure quick, even cooking. Clean and slice the mushrooms and zucchini evenly. Mince the garlic cloves finely so their flavor infuses the oil right away.
  2. Sauté the Chicken: Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken pieces in a single layer, seasoning them lightly with salt, pepper, and half the Italian seasoning. Cook until the chicken turns golden brown and is cooked through, about 5-7 minutes. Then remove the chicken from the skillet and set aside.
  3. Cook the Vegetables: In the same skillet, add the remaining olive oil if needed. Toss in the mushrooms and sauté until they start to brown and release moisture, about 4 minutes. Add the zucchini and garlic, cooking until the zucchini is tender but still crisp and the garlic fragrant, roughly another 3-4 minutes. Season with the remaining Italian seasoning, salt, and pepper.
  4. Combine Everything Together: Return the cooked chicken to the skillet and toss everything gently to combine and warm through for 2 minutes. Taste and adjust seasoning if needed.
