Beef and Vegetables

  • 8 oz thinly sliced ribeye or sirloin beef
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced sweet onions
  • 12 tbsp olive oil or avocado oil (for sautéing)
  • Salt, pepper, and garlic powder to taste

Keto Dough

  • 1 cup almond flour or coconut flour
  • 2 large eggs
  • Pinch of salt
  • 1/4 tsp garlic powder

Cheese

  • 4 oz provolone or mozzarella cheese, shredded or sliced

Instructions

  1. Prepare the Beef and Vegetables: Heat olive or avocado oil in a skillet over medium-high heat. Cook thinly sliced beef until browned, then remove and set aside. In the same skillet, sauté diced bell peppers and sweet onions until soft and slightly caramelized, about 5-7 minutes.
  2. Make the Keto Dough: In a mixing bowl, combine almond or coconut flour, eggs, a pinch of salt, and garlic powder. Mix thoroughly until a low-carb dough forms. Spread the dough evenly into a flat oval shape on a piece of parchment paper, smoothing it out for rolling.
  3. Combine Filling Ingredients: Return the cooked beef to the skillet with the softened peppers and onions. Stir well to combine and develop flavors. Remove from heat and let the mixture cool slightly to prevent melting the cheese prematurely.
  4. Assemble the Rolls: Evenly layer the beef and vegetable mixture over the keto dough. Sprinkle the shredded provolone or mozzarella cheese over the filling. Using the parchment paper to assist, carefully roll the dough tightly around the filling to form rolls.
  5. Bake Until Golden: Place the rolls on a baking sheet and bake in a preheated oven at 375°F (190°C) for approximately 20 minutes, or until the dough is golden brown and the cheese inside is melted and bubbly.
