Ingredients

Scale

Meat

  • 1 lb smoked kielbasa sausage, sliced into rounds

Vegetables

  • 2 lbs russet or Yukon Gold potatoes, peeled and cubed
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced

Dairy

  • 1 cup sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • ½ cup sour cream
  • 2 tbsp butter, melted
  • ½ cup milk

Seasonings

  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika

Instructions

  1. Prepare the Ingredients: Peel and cube the potatoes into bite-sized pieces for even cooking. Slice the kielbasa into rounds and finely chop the onion and garlic to build a balanced flavor base.
  2. Cook the Potatoes: Boil the cubed potatoes in salted water for about 10-12 minutes until just tender. Drain thoroughly to prevent excess moisture which could make the casserole soggy.
  3. Sauté the Sausage and Aromatics: While potatoes cook, heat a skillet over medium heat. Cook kielbasa slices until golden brown, then add chopped onions and garlic halfway through to soften and release their flavors.
  4. Combine Ingredients and Cheese Sauce: In a large bowl, gently mix the cooked potatoes, sautéed kielbasa, onions, and garlic. Stir in sour cream, melted butter, milk, and half of the shredded cheese. Season with salt, pepper, and paprika, folding the ingredients together carefully.
  5. Assemble and Bake: Transfer the mixture to a greased casserole dish and top with the remaining cheese. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes until cheese is bubbly and lightly browned.

Notes

  • Cut potatoes into even cubes for consistent cooking.
  • Drain potatoes well to avoid a watery casserole.
  • Use a mix of sharp cheddar and mozzarella for best melt and flavor.
  • Do not overbake; stop when cheese is golden and bubbly to keep the casserole creamy.
  • Let casserole rest a few minutes before serving for flavors to set and easier slicing.
