Ingredients

Scale

Steak and Marinade

  • 1 lb flank or ribeye steak, thinly sliced
  • 1/4 cup soy sauce (use gluten-free or tamari for gluten-free)
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp sesame oil
  • 1 tbsp sugar or honey
  • 1 tsp rice vinegar

Rice Base

  • 2 cups cooked jasmine rice

Spicy Sauce

  • 2 tbsp gochujang (Korean red chili paste)
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 1 tsp honey or sugar
  • 1 clove garlic, minced

Vegetables and Garnishes

  • 1/2 cup thinly sliced cucumbers
  • 1/2 cup julienned carrots
  • 2 scallions, sliced
  • 1 tbsp toasted sesame seeds
  • Optional: kimchi, pickled radishes, crushed red pepper flakes, chopped cilantro, fried egg

Instructions

  1. Prepare the Marinade and Steak: In a bowl, mix soy sauce, minced garlic, grated ginger, sesame oil, sugar, and rice vinegar. Coat the thinly sliced steak thoroughly with the marinade. Cover and let it marinate for at least 30 minutes or preferably overnight in the refrigerator to develop bold flavors.
  2. Cook the Rice: While the steak marinates, cook jasmine rice according to package instructions until fluffy and warm, providing a perfect base for the bowl.
  3. Make the Spicy Sauce: Combine gochujang, sesame oil, rice vinegar, honey (or sugar), and minced garlic in a small bowl. Stir well and adjust sweetness or spiciness to taste.
  4. Grill the Steak: Heat a grill pan or skillet over medium-high heat. Cook the marinated steak slices for 2-3 minutes per side until they develop a beautiful char and caramelization without overcooking. Remove from heat and let rest briefly.
  5. Assemble the Bowls: Divide steamed jasmine rice into serving bowls. Arrange grilled steak on top, then add fresh sliced cucumbers, carrots, and scallions. Drizzle generously with the spicy sauce and garnish with toasted sesame seeds. Add optional toppings such as kimchi, pickled radishes, crushed red pepper flakes, cilantro, or a fried egg if desired.

Notes

  • Marinate the steak overnight for maximum flavor infusion.
  • Use high heat to sear the steak and create a delicious char.
  • Prep and slice all fresh vegetables ahead of time to streamline assembly.
  • Taste and adjust the spicy sauce for preferred balance of sweet, sour, and heat.
  • Toast sesame seeds fresh for enhanced nuttiness and aroma.
