Ingredients

Scale

For the Cloud Bread

  • 3 large eggs, separated
  • 3 tablespoons cream cheese, softened (or vegan cream cheese / mashed avocado for dairy-free)
  • Pinch of salt

For the Lemon Chicken

  • 1 lb chicken breast or thighs, diced into bite-sized pieces
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • Fresh parsley or cilantro, chopped (optional)

Optional Toppings

  • Sliced avocado
  • Diced tomatoes
  • Greek yogurt or yogurt alternative
  • Chili flakes
  • Toasted nuts or seeds
  • Fresh herbs (dill, basil, mint)

Instructions

  1. Prepare the Cloud Bread: Separate the eggs. Whip the egg whites with a pinch of salt until stiff peaks form. In a separate bowl, soften the cream cheese until smooth, then gently fold in the egg yolks and whipped egg whites to create a fluffy batter. Spoon mounds onto a parchment-lined baking sheet and bake at 300°F (150°C) for about 25 minutes until golden and set. Let cool — these will be your airy taco shells.
  2. Cook the Lemon Chicken: Dice the chicken and marinate with freshly squeezed lemon juice, lemon zest, garlic powder, salt, and pepper. Heat olive oil in a skillet over medium-high heat, then cook the chicken until fully cooked and slightly caramelized to lock in the citrus flavor. Garnish optionally with fresh parsley or cilantro.
  3. Assemble Your Tacos: Once the cloud bread has cooled slightly, gently lift each piece and load it with the lemon chicken. Add your favorite toppings such as sliced avocado, diced tomatoes, fresh herbs, a drizzle of Greek yogurt, or a sprinkle of chili flakes for texture and flavor contrast.

Notes

  • Use room temperature ingredients for the best cloud bread texture.
  • Gently fold the batter to keep cloud bread light and airy rather than dense.
  • Marinate chicken for at least 15 minutes to enhance flavor and tenderness.
  • Assemble tacos quickly after cloud bread cools to maintain crunch.
  • Experiment with herbs like dill, parsley, or mint to personalize flavor.
