Ingredients

Scale

Meatballs

  • 1 lb ground chicken (lean)
  • 2 cloves garlic, finely minced
  • 1/3 cup grated Parmesan cheese
  • 1 tsp Italian herbs mix (dried)
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil (for cooking)

Sauce

  • 2 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, chopped
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1 tsp Italian herbs mix (dried)
  • 1/4 tsp red pepper flakes (adjust to taste)

Garnish

  • Fresh basil leaves or chopped parsley
  • Extra grated Parmesan cheese (optional)

Instructions

  1. Prepare the Meatball Mixture: Combine ground chicken with finely minced garlic, grated Parmesan, Italian herbs, salt, and pepper in a mixing bowl. Use your hands or a spoon to mix everything thoroughly but gently to keep the meatballs tender.
  2. Form and Cook Meatballs: Shape the mixture into small, even meatballs. Heat olive oil in a skillet over medium-high heat and cook meatballs until golden brown on all sides and cooked through, about 7-10 minutes. Remove meatballs and set aside.
  3. Create the Creamy Sauce: In the same skillet, sauté minced garlic until fragrant. Add chopped sun-dried tomatoes, chicken broth, and heavy cream. Stir well and let the sauce simmer gently until it thickens slightly. Season with Italian herbs and red pepper flakes.
  4. Combine Meatballs with Sauce: Return the cooked meatballs to the skillet, gently coating them with the creamy sauce. Simmer together for a few minutes to allow flavors to meld and ensure meatballs are heated through.
  5. Garnish and Serve: Finish with fresh basil leaves or chopped parsley for color and aroma. Serve immediately over your choice of pasta, rice, mashed potatoes, or alongside a salad.

Notes

  • Don’t overmix the meat mixture to keep meatballs tender and juicy.
  • Make meatballs uniform in size to ensure even cooking and prevent drying out.
  • Use a hot pan to sear meatballs, creating a crust that locks in moisture.
  • Simmer the sauce gently instead of boiling to prevent cream from separating and maintain a silky texture.
  • Let meatballs rest in the sauce for a few minutes before serving to soak up flavors.
