  • 1/2 cup grated Parmesan cheese

  • 1/4 teaspoon red pepper flakes (adjust to taste)

Instructions

  1. Prepare the Salmon: Pat the salmon fillets dry with paper towels to ensure a nice sear. Season both sides generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat and place salmon skin-side down. Cook for about 4-5 minutes until the skin is crisp and the salmon is cooked halfway through.
  2. Make the Sauce: Remove the salmon and set aside. Lower the heat to medium and add a splash more olive oil if needed. Sauté minced garlic until fragrant, about 30 seconds, then stir in chopped sun-dried tomatoes. Pour in the heavy cream, stirring to combine as it thickens. Mix in grated Parmesan cheese and fresh chopped basil. Add red pepper flakes, then season with salt and pepper to taste.
  3. Finish Cooking the Salmon in Sauce: Return the salmon fillets to the skillet, spooning sauce over the top. Cover and let simmer gently for 3-4 minutes or until salmon is cooked through and the sauce has thickened to perfection.
