Instructions

  1. Marinate the Steak: In a bowl, combine olive oil, lemon juice, minced garlic, oregano, cumin, paprika, salt, and pepper. Coat the steak thoroughly and let it rest for at least 30 minutes to absorb the Mediterranean flavors.
  2. Prepare the Grains: Cook quinoa or couscous according to package directions. Once cooked, fluff with a fork and let cool slightly.
  3. Chop the Vegetables and Herbs: Dice cherry tomatoes, cucumber, red onion, and slice Kalamata olives. Finely chop fresh parsley and mint for herbal freshness.
  4. Cook the Steak: Heat a grill pan or cast-iron skillet over medium-high heat. Sear the steak for 3 to 5 minutes per side, depending on thickness and desired doneness. Remove and let the steak rest for 5 minutes before slicing thinly.
