Instructions

  1. Prepare the Dough: In a bowl, mix warm water, sugar, and active dry yeast. Let it sit for 5-10 minutes until frothy to activate the yeast. Gradually add flour and salt, kneading until you form a smooth and elastic dough. Cover with a cloth and let the dough rise until doubled in size, approximately 1 to 2 hours.
  2. Divide and Roll: Punch down the risen dough to release air. Divide it into equal portions (about 8-10 pieces). Roll each portion into a rope approximately 12 inches long, preparing them for stuffing.
  3. Stuff with Mozzarella: Cut fresh mozzarella sticks into smaller sticks suitable for stuffing. Place one piece of mozzarella inside the center of each dough rope. Carefully pinch and seal the dough around the cheese on all sides to prevent leakage during baking.
  4. Shape the Pretzels: Form each stuffed rope into the classic pretzel shape by making a U shape, crossing the ends over each other, and pressing the ends down onto the bottom curve of the U.
  5. Boil in Baking Soda Water: Preheat a large pot with 10 cups of water and 2/3 cup baking soda and bring it to a rolling boil. Carefully drop each pretzel into the boiling water bath for about 30 seconds. Remove and place on a parchment-lined baking sheet.
  6. Bake to Perfection: Brush each boiled pretzel immediately with melted butter to add flavor and shine. Bake in a preheated oven at 425°F (220°C) for 12-15 minutes, or until they turn a deep golden brown.
