Ingredients

Scale

Chicken Filling

  • 1 lb chicken breast or thigh, boneless and tender
  • 2 tsp nacho seasoning (blend of chili powder, cumin, paprika, and garlic powder)
  • 1 medium onion, diced
  • 1 bell pepper, diced
  • 2 tbsp butter or oil, for cooking

Cheese

  • 1 to 1.5 cups shredded cheese (cheddar or Mexican blend)

Bread

  • 1 package bread dough or pre-made rolls (enough to roll out into a large rectangle about 1/4 inch thick)

Optional

  • Sour cream or crema, for dipping or spreading
  • Fresh cilantro, for garnish
  • Jalapeños or hot sauce (if adding a spicy kick)

Instructions

  1. Prepare the Chicken Filling: Finely chop or shred the chicken breast or thigh. Heat butter or oil in a pan, sauté the chicken until cooked through. Add diced onions and bell peppers, cooking until softened. Season generously with nacho seasoning and mix well to coat all ingredients.
  2. Roll Out the Bread Dough: On a floured surface, roll out the bread dough into a large rectangle approximately 1/4 inch thick, creating a base for the filling.
  3. Layer the Filling and Cheese: Spread the cooked chicken mixture evenly over the dough, leaving a small border around the edges. Sprinkle shredded cheese generously over the filling to ensure it melts perfectly when baked.
  4. Roll and Seal: Carefully roll the dough from one long side, keeping the filling inside. Pinch the edges and ends firmly to seal the roll tightly, preventing filling from leaking during baking.
  5. Bake to Golden Perfection: Place the rolled dough on a parchment-lined baking sheet. Bake at 375°F (190°C) for 20-25 minutes until the bread is golden brown, crispy on the outside, and the cheese inside is melted and gooey.
  6. Cool and Slice: Let the baked Nachos Chicken Bread cool slightly for 5-10 minutes to set the filling. Slice into thick pieces and serve warm.

Notes

  • Evenly distribute the chicken filling to avoid soggy spots or leaks.
  • Use freshly grated cheese for better melt and texture.
  • Don’t overfill to prevent the bread from bursting or uneven cooking.
  • Seal dough edges well to keep filling inside during baking.
  • Allow to rest before slicing to help the bread hold its shape.
