Ingredients

Protein

  • Chicken thighs or breasts – 1.5 lbs

Spices & Seasoning

  • Sazón seasoning packets – 2 (about 14g total)

Grains & Broth

  • Long grain rice – 1 cup
  • Chicken broth – 2 cups

Vegetables & Aromatics

  • Bell peppers (any color), chopped – 1 cup
  • Onion, chopped – 1 medium
  • Garlic, minced – 3 cloves

Oils & Garnishes

  • Olive oil – 2 tablespoons
  • Optional fresh cilantro, chopped – for garnish

Instructions

  1. Prepare your ingredients: Chop the onion, bell peppers, and garlic finely. If using chicken breasts, cut into even pieces to ensure uniform cooking. Measure rice and chicken broth so they’re ready to use.
  2. Brown the chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken with half of the sazón seasoning and brown on both sides until golden, about 3-4 minutes per side. Remove chicken and set aside.
  3. Sauté the aromatics and veggies: In the same skillet, add the chopped onion, garlic, and bell peppers. Cook for about 5 minutes, until softened and fragrant, scraping up any browned bits from the pan to deepen flavor.
  4. Cook the rice: Add rice to the skillet and stir to coat it in oil and spices. Pour in the chicken broth and remaining sazón seasoning, stirring everything to combine evenly.
  5. Combine and cook through: Return browned chicken to the skillet, nestling it into the rice mixture. Cover the skillet with a tight-fitting lid, reduce heat to low, and simmer gently for 18-20 minutes, or until rice is tender and chicken is cooked through.
  6. Finish and garnish: Remove skillet from heat and let sit covered for 5 minutes. Fluff rice with a fork and sprinkle chopped fresh cilantro on top before serving for a burst of freshness and color.

Notes

  • Pat chicken dry before browning to achieve a perfect golden crust.
  • Use quality, fresh sazón seasoning for the best authentic flavor.
  • Do not rush the simmering process; allow the rice to absorb the broth slowly for ideal texture.
  • Cover skillet tightly to trap steam and cook evenly.
  • Let the dish rest off heat before serving to let flavors meld beautifully.
