  • 1/4 tsp red pepper flakes (optional)
  • 1 cup heavy cream or half-and-half
  • 1/4 cup fresh lemon juice
  • 1 tsp lemon zest
  • 1 cup grated Parmesan cheese, divided

Instructions

  1. Cook the shrimp: Heat olive oil and butter in a large oven-safe pan over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Add the shrimp and cook for about 2 minutes per side, until pink and opaque. Remove the shrimp from the pan and set aside to prevent overcooking.
  2. Prepare the sauce: In the same pan, add more butter if needed along with garlic and red pepper flakes. Stir briefly, then pour in the heavy cream, lemon juice, and add 3/4 cup of Parmesan cheese. Whisk continuously until the sauce is smooth, creamy, and well combined.
  3. Combine pasta and sauce: Add cooked al dente pasta directly into the pan with the sauce, stirring carefully to evenly coat all the pasta. Gently fold the cooked shrimp back into the mixture.
  4. Bake to perfection: Sprinkle the remaining Parmesan cheese and chopped parsley over the top of the pasta bake. Bake uncovered in a preheated oven at 375°F (190°C) for 15-20 minutes, or until the top is golden brown and bubbly.
  5. Rest and serve: Remove the bake from the oven and let it rest for a few minutes to allow the sauce to thicken slightly. Serve warm, garnished with additional lemon zest or fresh herbs if desired.
