Instructions

  1. Brown the Meat and Aromatics: In a large pot, heat a little oil over medium-high heat. Add the ground beef or Italian sausage along with diced onion and minced garlic. Cook until the meat is browned and the onions are translucent, stirring occasionally to break down the meat.
  2. Add Tomatoes and Broth: Pour in the crushed tomatoes and broth. Stir well to combine all the savory bits from the bottom of the pot and build a rich base for your soup. Bring the mixture to a gentle simmer.
  3. Incorporate Broken Lasagna Noodles: Break your lasagna noodles into bite-sized pieces and add them directly to the pot. Stir to prevent noodles from sticking and ensure even cooking, then cover and let simmer until the noodles are tender, about 10-12 minutes.
  4. Stir in Cheese and Seasonings: Once the noodles are cooked, reduce the heat to low and gently mix in ricotta cheese, shredded mozzarella, grated Parmesan, and Italian seasoning. This step makes the soup wonderfully creamy and cheesy.
