Ingredients

Scale

Main Ingredients

  • 1 lb lean ground beef or turkey
  • 1 cup pepperjack cheese, grated or cubed
  • 1/2 cup bread crumbs (or gluten-free bread crumbs for gluten-free version)
  • 1 large egg
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • Salt, to taste
  • Black pepper, to taste
  • 1/4 cup ketchup or tomato sauce (for mixing or glazing)

Instructions

  1. Prepare the ingredients: Preheat your oven to 375°F (190°C). Finely chop the onion and mince the garlic. Grate or cube the pepperjack cheese and set everything aside.
  2. Mix the meatloaf base: In a large bowl, combine ground meat, bread crumbs, egg, Worcestershire sauce, chopped onion, minced garlic, salt, and pepper. Mix gently but thoroughly by hand or with a spoon until well incorporated.
  3. Add the cheese: Fold the grated or cubed pepperjack cheese evenly into the meat mixture to create spicy, melty pockets of flavor throughout.
  4. Shape and bake: Transfer the mixture to a loaf pan or shape it into a loaf on a lined baking tray. Spread a layer of ketchup or tomato sauce on top to add moisture and caramelize during baking.
  5. Bake to perfection: Place the meatloaf in the oven and bake for 45-55 minutes, or until the internal temperature reaches 160°F (71°C). Let it rest for 10 minutes before slicing to lock in juices.

Notes

  • Don’t overmix the meat to avoid a dense texture.
  • Use freshly grated pepperjack cheese for better melting.
  • Allow the meatloaf to rest before slicing to help it hold together and stay juicy.
  • Test doneness with a thermometer to prevent undercooking or drying out.
  • Customize your glaze by mixing ketchup with chili powder or honey for extra flavor.
