This healthy and flavorful recipe balances zesty, briny, and slightly spicy notes, making it perfect for casual dinners or special occasions.

Ingredients

Scale

Fish

  • 4 fresh red snapper fillets (about 6 oz each)

Veracruz Sauce

  • 4 ripe tomatoes, diced
  • 1/2 cup green olives, pitted and sliced
  • 2 tablespoons capers, drained
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 jalapeño pepper, seeded and finely chopped
  • 2 tablespoons fresh oregano, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lime juice
  • Salt and pepper, to taste

Instructions

  1. Prepare the Ingredients: Rinse and pat dry the snapper fillets, then season lightly with salt and pepper. Dice the tomatoes finely, and finely chop the onion, garlic, jalapeño, oregano, and cilantro to ensure even cooking and full flavor release.
  2. Make the Veracruz Sauce: Heat olive oil in a large skillet over medium heat. Sauté the onions until translucent, about 3-4 minutes. Add garlic and jalapeño and cook for another minute until fragrant. Stir in tomatoes, green olives, and capers, then simmer gently for 8-10 minutes or until the sauce thickens slightly and the flavors meld together.
  3. Cook the Red Snapper: Push the sauce to one side of the skillet and place the snapper fillets skin-side down if skin-on. Cook over medium heat for about 3-4 minutes per side, depending on thickness, until the fish is opaque, flakes easily, and is cooked through.
  4. Combine and Finish: Spoon the sauce generously over the cooked fillets. Squeeze fresh lime juice on top and scatter the chopped oregano and cilantro before serving to enhance the dish’s zesty and herbal freshness.

Notes

  • Use the freshest snapper possible for best texture and flavor.
  • Do not overcook the fish to keep it moist and flaky.
  • Taste and adjust acidity by balancing tomatoes and lime juice as desired.
  • Choose high-quality olives and capers for a noticeable flavor difference.
  • Cook the sauce gently on medium-low heat to preserve brightness and freshness.
