Russian Chicken and Cabbage Rolls

Russian Chicken and Cabbage Rolls

Russian Chicken and Cabbage Rolls are a comforting, traditional dish combining tender ground chicken, soft cabbage leaves, and savory seasoning. This quick and healthy recipe is perfect for a hearty family dinner, featuring a flavorful filling wrapped in cabbage, baked in a tangy tomato sauce, ready in under an hour.

Ingredients

Scale

Filling

  • 1 lb ground chicken
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice (preferably leftover, cold rice)
  • 1 egg
  • Salt and pepper, to taste

Wrapping

  • 12 large cabbage leaves (green or savoy cabbage)

Sauce and Cooking

  • 1 cup tomato sauce or tomato paste diluted with water
  • 2 tbsp vegetable oil or butter (for sautéing)

Optional Garnishes and Herbs

  • Fresh dill or parsley, chopped
  • Sour cream (for serving)

Instructions

  1. Prepare the Cabbage Leaves: Core-pierce a small to medium head of cabbage and boil it in salted water until leaves are soft but still pliable. Carefully remove each leaf and place them on a towel to cool and drain excess water.
  2. Make the Filling: Heat vegetable oil or butter in a skillet. Sauté finely chopped onions until translucent, then add minced garlic and cook briefly. Stir in ground chicken and cook thoroughly until no longer pink, breaking it into small crumbles. Mix in cooked rice, season with salt and pepper, and let cool slightly.
  3. Assemble the Rolls: Lay one cabbage leaf flat on a surface, spoon a generous amount of filling at the base, fold in the sides, and roll tightly like a burrito. Repeat with remaining leaves and filling.
  4. Prepare the Baking Dish: Spread a thin layer of tomato sauce on the bottom of the dish. Arrange rolls seam-side down in a single layer and pour the remaining tomato sauce evenly over to keep moist.
  5. Bake to Perfection: Cover the dish with foil and bake at 350°F (175°C) for 30-40 minutes until heated through and sauce bubbles. Remove foil in the last 10 minutes to allow slight caramelization on top.

Notes

  • Steam the cabbage leaves as an alternative to boiling for better texture and easier rolling.
  • Use moderate amounts of filling in each leaf to prevent tearing.
  • Cold, leftover rice is preferable as it holds the filling better than freshly cooked rice.
  • Cover rolls generously with sauce to keep them moist during baking.
  • Allow rolls to rest slightly after baking to let flavors meld before serving.
