  • 10 oz pasta (penne, fusilli, or rigatoni recommended)

  • 1/4 cup freshly grated Parmesan cheese
  • Fresh basil leaves for garnish
  • Optional: 1 cup cherry tomatoes, halved
  • Optional: Toasted pine nuts for garnish

Instructions

  1. Prepare the Pasta: Bring a large pot of salted water to a boil and cook the pasta until al dente according to package instructions. Drain the pasta, reserving one cup of pasta water, then set the pasta aside.
  2. Cook the Sausage: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Remove the sausage from its casing and crumble into the skillet. Cook for 6-8 minutes, stirring occasionally, until browned and cooked through.
  3. Add Garlic and Tomatoes: Stir in the minced garlic and cherry tomatoes (if using). Cook for 2-3 minutes until tomatoes soften and garlic is fragrant, being careful not to burn the garlic.
  4. Combine Pasta and Pesto: Lower the heat, add the cooked pasta to the skillet, and spoon in the basil pesto. Toss gently to combine, adding reserved pasta water a little at a time to create a silky, well-coated sauce.
  5. Finish with Cheese and Garnish: Remove the pan from heat, sprinkle freshly grated Parmesan cheese over the pasta, and garnish with torn fresh basil leaves. Serve immediately.
